This post is my spin on the tuna melt at Rosie’s Diner in Monument, Colorado. Theirs is grilled sourdough with homemade tuna salad, American cheese and tomatoes. I opened it up, slipped on some of their sliced jalapeños, and put the sandwich back together before eating. Yum, yum.
